I *LOVE* simple soups, and they’re made even better when they’re cheap and healthy!
This is one of the easiest recipes I’ll ever share with you. I saw a similar one somewhere and remembered it (since it’s so basic) and kind of tweaked it to my own version.
Take two florets of broccoli and cook in boiling water for about 10 minutes. Add one tbsp vegan stock powder to the water while it cooks. I use massels chicken or veggie stock as it’s vegan and adds an awesome, mild flavour.
Remove from heat and let cool. Place the broccoli with about 2 cups of liquid into a food processor and blend until it forms a puree.
This amount makes about two serves, so you may want to increase if you’re cooking for more.
Serve right away or store in the fridge or freezer for future use ^.^
