Fruit & nut chocolate bark is a guiltless, superfood treat that is good for you and literally takes a minute to make!
This real chocolate is packed full of antioxidants, made from cacao powder which comes straight from the tree – no added waxes or fillers. The coconut oil and caffeine will increase your metabolism and help you burn more calories and fat.
I make this at least every fortnight. It combines two of Ani’s amazing recipes (liquid chocolate and raisin bark), but I have tweaked it so it suits my tastes more.
It’s incredibly simple, and while cacao powder and coconut oil are quite expensive, they go a long way and are VERY good for you.
Take 1 cup liquid coconut oil and 1/2 cup cacao powder and whisk until combined (takes about 20 seconds). It’s optional, but you can add 1 teaspoon agave nectar for sweetness as this is quite bitter if you make it on it’s own.
FRUIT & NUT CHOCOLATE BARK
Line a deep tray or container with baking paper.
Choose your favourite dried fruit and nuts and sprinkle them across the bottom of the tray to form an even layer. You can add as much or as little as you like. I prefer to have a fair amount of mixed dried fruits, nuts and pumpkin seeds as the natural sugars in the fruit make this much sweeter.
Note: Because I ran out of cacao and coconut oil while making this, I had to transfer the fruit into a much smaller container and quarter the amount I was making.
Pour the cacao and coconut oil mixture over the fruit and place in the freezer for about an hour to set.
The mixture is ready when it feels solidified.
Simply break into small pieces and enjoy =D Perfect guiltless chocolate snack!
