This is super simple, quick and easy. Another one of Ani’s recipes, although she suggests cutting the frozen kream into bars to serve. I just crumble mine into a bowl or slice off a piece to snack on. It would be the perfect cold treat for a hot summers day~
I also found that when it hadn’t frozen properly (it had been in the freezer for maybe two hours) and still had a slightly sticky texture, it tasted a little stronger and sweeter.
That or somebody drugged me O.o
Combine 4 cups cashews, 1 cup lime juice, 1/2 cup agave syrup, 1/2 cup coconut oil and 1 cup filtered water in a food processor and blend until smooth. Add extra water if needed.
Put the mixture into a container or dish and freeze for 2 to 3 hours.
Cut into bars or crumble to serve.
Will keep for weeks in the freezer.
