I made these up after another conversation with Laura about recipe experimentation! I love that I no longer have a need for chocolate in my life, cacao powder is the best raw replacement ever! ^.^
They’re super easy, and you can replace the mint extract with fresh mint if you like, but mint extract gives a bitter taste that I was not so keen on.
Combine 3 cups dates, 1 cup walnuts, 2 tbsp cacao powder, 1/2 cup coconut and 2 tsp mint extract in a food processor until a thick mixture is formed.
Form into balls and store in the fridge!
