Sell Your Soul Pumpkin Cookies (with chocolate!) V/GF

From “vegan cookies invade your cookie jar”, I adapted this recipe to include chocolate because Choc + Pumpkin is one of the sexiest mouth experiences one can have.
You can try sprinkling the top of the cookies with pumpkin seeds, or leave the dough as it is.

Note: The first part of this recipe is complicated and time consuming, as it involves simmering the pureed pumpkin to reduce it’s moisture content and ultimately give you a better cookie. Be ready for at least half an hour of prep work.

Note: This recipe uses PUREED pumpkin, so make sure you refer to my “how to” guide!


Take 1 cup pureed pumpkin and place in a small saucepan over medium heat. You want to cook the pumpkin without boiling it, it should look like it’s steaming. If it starts to boil, lower the heat. Stir often.


After about 20 minutes, place the pumpkin in a measuring cup. It should have reduced to about 3/4 of a cup. Continue the process until the pumpkin is reduced to 1/2 cup.


Mine took about 25 minutes, but it can take up to 45. Allow to cool completely.


Preheat oven to 180 degrees celcius. Line two trays with baking paper.
In a large mixing bowl, use a hand mixer to cream together 1/2 cup nonhydrogenated vegetable shortening (I use nuttlex), 1/2 cup sugar and 1/2 cup packed brown sugar. Mix in the cooled pumpkin and 1 tsp vanilla extract.


Sift in 1/4 cup oat flour (make your own by pulsing rolled oats a few times in the blender), 1 1/2 cups all purpose flour (again, I used orgrans gluten free plain flour), 1 1/2 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp ground cloves, 1/2 tsp baking powder and 1 tsp ground ginger and mix to combine.


Spoon rounded tablespoons of mixture onto cookie sheets.


It’s optional, but you can press a few pumpkin seeds onto the cookies, or do as I did, and add vegan chocolate chunks. (I use sweet william chocolate).


Bake for 10 to 20 minutes, watch the cookies to make sure they don’t burn. Allow them to cool for at least 10 minutes on the trays before transferring to a wire rack to cool completely.
