I got inspiration for these from Fat Free Vegan, an amazing website that you should all check out! I adjusted the ingredients to suit what I had on hand.
Note: This recipe doesn’t make too many balls, you may want to double or triple the ingredients.
BANANA OATMEAL BALLS
Take 1 medium banana (overripe is preferred) and slice into 3/4 inch pieces. Arrange slices on a plate.
Microwave until most of the moisture has left the fruit. It should take from 4 to 6 minutes.
If yours looks like this, CONGRATS! You burned it! No stress. Just make sure you have another banana on hand, and check it regularly.
Place the banana in a food processor with 4 large dates, 3 tbsp oats, 2 tsp vanilla extract and 1/2 cup raw cashews.
Blend until a thick crumbly mixture has formed.
Roll into balls and store in the fridge!
