Another recipe from Ani’s cookbook. These are nutritious, sweet yet tart cookies that are ridiculously easy to make!
APRICOT SESAME COOKIES
Place 1 cup dried apricots in a food processor and process into small pieces.
Add 1/2 cup sesame seeds, 1/2 cup shelled pistachios and 1 teaspoon lemon juice or lemon extract.
Process the mixture well.
Take 1 1/2 tbsp of dough, form into balls and press into cookie shapes. This is easily done on a sheet of baking paper.
Store in the fridge for a week or for several weeks in the freezer.
