I made these up because we had so many bananas around and I needed to use them up. One was so black on the outside I thought it would be mush inside… But it was perfect!
COCONUT BANANA BALLS
Microwave 1.5 bananas until most of the moisture has gone (if you previously missed it, instructions on how to do this can be found in one of my older entries, the recipe for banana oatmeal balls).
Combine 3/4 cup dessicated coconut, 2/3 cup raw almonds and 1/2 cup walnut kernels in a food processor until thoroughly mixed.
Add 1 cup pitted dates and the banana.
Mix until a crumbly, sticky mixture is formed.
Roll into balls and store in the fridge!
