White bean salad with apple dressing! V/GF/SF

This is an easy, fresh and delicious recipe that I took from a Womens Weekly cookbook and altered slightly.

Ideally I would have used two cans of white beans, but I ran out and had to replace one with a can of kidney beans.

Note: I made a double batch of this! The recipe below is for a single batch which equals one serve for a main meal.

WHITE BEAN SALAD
1 can white beans (any kind, cannellini, butter, etc)
1 carrot, chopped thinly
a minumum of 2 radishes chopped (I used half a bunch! Yum!)
a minimum of 2 tbsp fresh flat leaf parsley, chopped
1/2 cucumber, chopped thinly
1 tbsp sunflower seeds (toasted, if you wish)
1 tbsb pepitas (also toasted, if desired)

Optional:
50g mesclun or other lettuce

APPLE DRESSING

Mix 1 tablespoon apple cider vinegar with 2 tablespoons apple juice (preferably fresh) and pour over the salad.
