Oatmeal Raisin cookies~ R/V

If you’re a fan of oats and raw goodness, these are for you! Inspired by Ani’s raw recipe book (as always <3) I adapted these to make them work for me. I always use Australian Sultanas, they're plumper and juicier IMO.

OATMEAL RAISIN COOKIES

In a food processor, blend 1 1/2 cups raw oats with 2 tsp ground cinnamon until fine.

Add 1 cup packed dates, 1/3 cup agave nectar and 1 cup sultanas and blend until a thick dough is formed.

Roll into balls and flatten into cookies, or place in cookie cutters on a sheet of parchment paper to get a full and round cookie (see the picture from the original cookie recipe at the top of this page).

Store in the fridge for a week, or in the freezer for months. If storing in the freezer, thaw for at least 15 minutes before eating.
