My new favourite thing ever. They literally take five minutes to make, and they’re so amazingly fantastic. Did you know that goji really is a superfood!? Google it, people.
ALMOND GOJI CACAO CHIP COOKIES
In a bowl, mix together 1/2 cup almond butter, 2 tbsp vanilla extract and 3 tbsp agave nectar.
Add 1 1/2 cups almond meal, 3 tbsp cacao nibs and 1/2 cup goji berries (I used dried berries, I’ve never seen them available fresh).
Mix well to form a thick dough.
Roll into balls and shape into cookies! You may wish to flatten balls on baking paper and set them in the fridge this way, I simply made them into cookie shapes and set them in the fridge for a while. Serve immediately or chilled, either way is fine.
