This is one of Ani’s delicious raw desserts!
I have added an optional few steps at the end that turns this recipe into STEWED apricots and apples in white wine syrup. Of course, this means that it’s no longer raw, but I like to have versatility.
APRICOTS IN SPICED WHITE WINE SYRUP
In a bowl, combine 1 cup dry white wine, 1/4 cup agave syrup, 1/2 tsp fennel seeds, pinch ground cinnamon, pinch ground cloves, pinch black pepper and 1tbsp lemon zest. Mix well.
Add 1 cup dried apricots and let soak for at least 15 minutes before serving.
Will keep in the fridge for a few days!
STEWED APRICOTS AND APPLIES IN SPICED WHITE WINE SYRUP
Core and dice 2 medium apples.
Combine all ingredients in a saucepan.
On medium to high heat, bring to the boil on the stove, stirring occasionally.
Simmer for 5 to 10 minutes, until everything is tender. Remove from heat and place in a bowl!
Serve warm, or store in the fridge for a cool snack.
You can also try this with soy ice cream or raw kream.
