Choc chip cookie dough scoops! V/GF

Who doesn’t love cookie dough? All of the cookies I make taste so good straight from the bowl in dough form, but this is a treat made especially for lovers of unbaked delights!

Another fave from “vegan cookies invade your cookie jar”.

CHOC CHIP COOKIE DOUGH SCOOPS

In a large mixing bowl, use an electric mixer to cream together 1/2 cup nuttlex or other vegan margarine, 2 tbsp raw sugar, 1 cup brown sugar (dark brown, preferably), 1/4 cup non dairy milk and 1 1/2 tsp vanilla essence until creamy and fluffy.

Beat in 1 ¾ cups gluten free flour to form a soft, fluffy dough.

Fold in 1 ¼ cups non dairy chocolate chips.

Scoop small tablespoons of dough onto waxed paper and set in the freezer until firm (about an hour).

If you wish to smooth out the balls once they’re firmer, feel free to do this (a spoon works well).

Store in the freezer in a loosely covered container.

Macadamia Ginger Cookies! GF/V
Macadamias and ginger make the perfect cookie combination. Seriously. If you don’t believe me, try it for yourself! This golden recipe wouldn’t be in “vegan cookies invade your cookie jar” unless it were fantastic.
